Chocolate Mousse

Chocolate Mousse

Disc of chocolate mousse with brandy and orange

Ingredients

  1. 500gr Dark Chocolate Disc
  2. 500gr White Chocolate Disc
  3. 250ml Cream
  4. 3 Gelatin leaves
  5. Orange zest to taste
  6. 2 Tsp Brandy
  7. 3 tsp of Orange juice
  8. 3 Egg whites whipped
  9. 3 Egg yolks separate

Preparation

  • Melt the Chocolate over a double boiler & 2/1 hours
  • Add zest, Brandy and Orange juice
  • Remove from heat and stir in egg yolk one at a time
  • Fold in whipped cream and whipped white Egg

Presentation

  • Present in the open Whisky glass
  • Garnish with fresh peppermint ready to serve
