Chocolate Mousse
Disc of chocolate mousse with brandy and orange
Ingredients
- 500gr Dark Chocolate Disc
- 500gr White Chocolate Disc
- 250ml Cream
- 3 Gelatin leaves
- Orange zest to taste
- 2 Tsp Brandy
- 3 tsp of Orange juice
- 3 Egg whites whipped
- 3 Egg yolks separate
Preparation
- Melt the Chocolate over a double boiler & 2/1 hours
- Add zest, Brandy and Orange juice
- Remove from heat and stir in egg yolk one at a time
- Fold in whipped cream and whipped white Egg
Presentation
- Present in the open Whisky glass
- Garnish with fresh peppermint ready to serve
